Cinnmon Roll Protein Pancakes with Protein Icing
Breakfast is one of my favorite meals because I love waking up to delicious fresh coffee and the smell of baked goods. Obviously, baked goods typically are not possible when it comes to health and fitness, but these Cinnamon Roll Pancakes absolutely are allowed and can be enjoyed every day because they are so healthy. I enjoy protein pancakes regularly because they are so easy to make and to get my macronutrients in without having to think too much about each ingredient. This recipe is high protein, low carb, low sugar, high fiber, and under 350 calories. I have put the exact macronutrients below so you can see for yourself, but ultimately I don't get too specific on counting macros as long as I am getting in a well balanced meal and I enjoy it intuitively (I stop eating when I am full). All of these ingredients are in My Fitness Pal (including the ABS Protein Pancakes mix) so it's super easy to add into your nutrition. Now, that you have seen that these are 100% health protein pancakes that you can enjoy every day let's get into how easy this recipe is to make!

The ingredients you need to make this are the following:

  • ABS Cinnamon Roll Protein Pancakes
  • 1/2 cup of water
  • 2 whole eggs
  • Whipped Philadelphia Cream Cheese
  • 2 Packets of Stevia (Or natural no calorie sweetener)
  • 1 tsp. Vanilla Extract

That is it! The easiest way to see how to make this is just follow the steps in the images below and your stack should turn out just like the photos! Place 2 whole eggs into a mixing container and then add in 1 full scoop of the Cinnamon Roll ABS Protein Pancakes mix Add in 1/2 cup of water & then stir thoroughly until all of the clumps are gone and batter is smooth. (If your batter is super thick simply add extra water by 1 tbsp at a time until you reach your desired consistency). Spray your non-stick skillet with a non-stick spray like Pam or a Coconut Oil Spray. Heat the skillet on low to medium heat (if it's too hot your batter will start bubbling as soon as you pour it on there. You don't want it to start bubbling as soon as it hits the heat. If you have a griddle I would put it around a 4 to 5, but for regular stove top stick with somewhere below medium, but above low). Once skillet is warm, pour batter straight from mixing bowl into a 4 inch size pancake (or as small or big as you'd like). Once the edges of the pancake start to puff (like in the picture) and the edges bubble then the pancake is ready to flip. Flip pancake and cook until golden brown. Repeat this step until all of the batter has been cooked.

 

When all of the batter has cooked, you should have a stack that looks like this if you used the same size pancakes as I did, but this is the golden brown color you are going for.

Set pancakes to the side for a moment and let's make your cream cheese icing. Take 2 full tablespoons of the Whipped Cream Cheese + 2 packets of Stevia and about 1 tsp of Vanilla Extract in a mixing container and mix together until the mixture looks like frosting. Take one big dollop of ALL the icing in the mix and dollop on top of your stack of pancakes like in the picture then sprinkle with cinnamon on top (cinnamon is optional).   Using the back of a spoon or a butter knife, simply spread the "icing" on your stack of pancakes like you are icing a cake like you see in the picture.
Then simply cut into your delicious Cinnamon Roll stack with a fork and enjoy your Cinnamon Roll Protein Pancakes! This is great for your daily high protein breakfast and makes it seriously easy to stick to your nutrition when you taste how good these are, but they are also great at night when you are looking for a meal that will keep you full for hours without all the carbs and sugar. If your pancakes didn't turn out perfect, that's ok because it took me a few tries to get it right and the main thing is the heat on your skillet; make sure you don't have it too high to where the pancakes don't cook correctly.
