Carrot Cake ABS Protein Pancakes

     Pancake Batter
1 rounded scoop ABS Vanilla Cake Batter pancake mix
     2 large egg whites
     1/3 c. 1% reduced fat milk
     1 T. raisins
     2 oz. shredded carrots
     1 T. ground cinnamon
     1 T. ground allspice

     Cream Cheese Icing
2 T. fat free cream cheese, softened
     1 t. stevia
     1/2 t. imitation vanilla extract

1 T. chopped pecans
     1 T. raisins


  1. In a small bowl, combine all icing ingredients and place in refrigerator to cool while you prepare the pancakes.
  2. Combine all pancake batter ingredients and prepare according to package directions.
  3. To assemble, stack pancakes and top with icing, pecans, and raisins. Enjoy!
