Blueberry Cinnamon Crumble ABS Protein Pancakes

     Pancake Batter
     1 rounded scoop ABS Cinnamon Swirl pancake mix
     2 large egg whites
     1/3 c. unsweetened almond milk
     1/4 c. fresh blueberries

     Cinnamon Crumble
     1/4 c. old fashioned oats
     2 t. brown sugar
     1/2 T. coconut oil
     1 t. ground cinnamon

     1/4 c. fresh blueberries
     1 t. maple syrup


  1. In a small saucepan, combine crumble ingredients and toast over medium heat for one minute. Transfer crumble to a plate to cool.
  2. In the same small saucepan, gently heat 1/4 c. blueberries over medium heat until softened. Remove from heat.
  3. Combine all pancake batter ingredients and prepare according to package directions.
  4. To assemble, stack pancakes and top with crumble, warmed blueberries, and maple syrup. Enjoy!
