"Peppermint Pattie" ABS Protein Pancakes

"Peppermint Patty" ABS Protein Pancakes

Ingredients

     Pancake Batter
     1 rounded scoop ABS Chocolate Chip pancake mix
     2 large egg whites
     1/3 c. 1% reduced fat milk
     1 T. cocoa powder

     Mint Cream
     2 T. nonfat Greek yogurt
     Peppermint extract (to taste)
     1/2 t. stevia

     Chocolate Sauce
     1/2 T. cocoa powder
     1 T. water
     1/2 T. granulated sugar

     Garnish
     1/4 oz. 86% dark chocolate
     fresh mint (optional)

Instructions

  1. In a small bowl, combine yogurt, stevia, and a couple drops of peppermint extract. Add more extract until you achieve the strength of flavor you'd like. Refrigerate while you prepare the pancakes.
  2. In a small saucepan, combine chocolate sauce ingredients over medium heat, stirring constantly. Let cook for 1 minute. Remove from heat.
  3. Combine all pancake batter ingredients and prepare according to package directions.
  4. To assemble, spread a thin layer of mint cream on each pancake and stack. Thin remaining yogurt mixture slightly by stirring in a few drops of water and drizzle over the top of pancakes, along with chocolate sauce. Top with chopped dark chocolate and fresh mint. Enjoy!
